Its funny, I've talked to people that have elk hunted for years, and they have never seen one. Most people don't put in the time and effort though.
We hunt the same area every year, and come hunting season, we know we will be in elk, but whether or not we get a shot, is always unknown.
They are an incredible animal. Even if I don't get one, just being 20-30 yards away from them, and watching and listening to them, is something you can't put a price on.
From what I've read, Colorado has a good elk population, so I'm sure if you spend enough time looking, you will eventually see some.
