    I'm a southern boy. If it comes from the sea or water, you have to take a big skillet, fill it full of oil (or lard) and coat the critter with some flour or breading and throw it in to fry it really good.

    Except when it comes to crawfish. Those suckers get boiled or stewed.

    The other exceptions are if we are talking oyster stew or a good gumbo. Those get cooked accordingly.
