I recently profiled a series of Western style Gyutos and this is the first of the batch. They are made from Aldo's S35VN steel and heat treated by Peter's to RC 60-61. The handle material is exhibition grade Amboyna Burl which is packed full of figure. The bolsters are African Blackwood. The pins and Corby bolts are copper and the liner is black paper micarta.
Specs:
OAL: 12.5"
Blade: 7.5" long, 1.87" high at the heel. Combined full flat grind with convex towards the edge which is down to 0.005" before sharpening. Distal taper and hand finished to 600 grit. Spine and choil are rounded.
Steel: 0.9" S35VN heat treated by Peter's to RC60-61
Handle: Exhibition grade stabilized Amboyna Burl with African Blackwood bolsters. Copper pins and Corbys. Black paper micarta liners and spacer.
