I ran a Manufacturing Jewelry business for 9 or 10 years.
My favorite tool for initial trimming of flash from silver or 14k gold castings and prying open what seemed like 10000 watches, was a small mini-stockman with carbon steel blades. Of course, that was before I found out a knife was designed for cutting only.
The ability of the blade to retain some sharpness and not bend was very important to me. Bending and resistance to edge chipping probably more so than sharpness.
I think pocket knives are used and abused more than any other knife, in this country anyway.
