Allen's Mater Review

I recently had the good fortune (as will several others on this board) of trying out Dan Koster's Mater Kitchen Knives. I was very pleased with what found. The blades are fairly thin and very sharp. I definitely noticed a difference in cutting ability between my Kitchen Aid santoku and the Mater. I had some fruit hanging around so I decided to try my hand at some slicing.

Here you see some grape slices.


You can really get some thin slices with these knives.


I ate a lot of fruit the first night I had these knives.


I really did enjoy using these knives. Dan puts out some seriously cool kitchen knives. I found that cooking was a lot more fun. I like the idea that the steel on these knives is not super corrosion prone and I also like the texture on the handles which made them slip resistant. They are definitely some serious slicers. Oh yeah, and they work on tomatoes as well.

If you'll notice I was a bit obsessed that night with making thin slices and then trying to read things through the slices. So, if you click on the pictures you should be able to read stuff.

Very cool! Did you notice any difference in cutting right or left handed with these?

I am currently trying to learn to slice with my knuckles resting up against the blade, because of this I didn't give the left handed version much of a work out. So while I have guesses and opinions on that I figure it would be better to leave it to someone who really gives both versions a workout.
