Best way to store kitchen knives?

I'm going to be getting my GF some new kitchen knives. I asked her if she'd be ok if they were really sharp. She said yes. I said "REALLY sharp??? So sharp you'll need to warn people?" She said yes :)

I'm wondering what is the best way to store knives? Butcher block with slots, or one of the magnetic strips on the wall? Something else?
 
Knife block with horizontal slots (so the edge of the blade is pointing sideways). Most all of the big name kitchen knifemakers make 'em (Shun, Wusthoff, Henckels, Messermeister) and you can also get ones made by AG Russell and I think Kangaroo.
 
I'm a fan of the magnetic strips as they take up no counter space and you can always see what blade you are grabbing.

They're heavy duty magnets embedded inside the wood (covered by a veneer on the back I think). So when you handle your knives it never scratches them up and protects the edge from metal on metal contact. Besides, they look amazing - especially the limited edition ones. I got handle one in a local woodworking store that carried them and the magnets are Ridiculously strong - the store had some HUGE chisels that weighed as much as a butchering cleaver on there with no slippage whatsoever. Great product.

By the way, I'm not affiliated with them :D Just an admirer of a quality product. I'd own some already except my landlord wouldn't be too happy with me drilling holes in the kitchen.
 
The most used kitchen knife is a chef's knife 7 inches long razor sharp kept clean and steeled before/after each meal preparation and left open on the counter on the cutting board.

The other kitchen knives are kept in the drawer ready to go.

I love my wood knife block. Its nice and safe and the knives dont have to be 100% dry before storage. The slots dont fit everyones set but I cut betwween 2 of the slots to make room for my china cleaver. So I imagine anyone one could customize theirs.

I think I read that with that block you can simply remove the bristles and clean them. Unlike an ordinary block with slots.

It seems like with an ordinary block the slots are always open for debris and things to get into. With the bristles you remove your knife and the "slot" closes up.

I have two wooden blocks. The knives they hold were not sets so the slots are not a great fit for all the blades. With the bristles I would imagine you have a "custom" slot for every knife.
 
as long as you clean your knives before returning them to the block....seems sanitary to me. maybe I'm missing something...*shrug*

The block does indeed "close up" after you remove a knife.
 
We got some Case kitchen cutlery when we were married in 1974. They came with plain, simple cardboard sleeves. We've kept them in those, in the drawer since, and it's been very effective. We've added some kitchen knives, since then and have used the high tech method of making sleeves from cereal boxes and masking tape.

Crude, but effective. If the sharp knife destroys the cardboard, there's always more material available.

Call me paranoid, but I like my kitchen knives out of sight in a drawer!
 
I use magnets for the knives I use everyday. The horizontal slot blocks are a design feature. Vertical slots won't hurt the edge. Common sense would dictate that all blocks would be unsanitary eventually. Depending on the kitchen design, it's easy to construct hanging slots with enough wood to keep the knife vertical - no good if there are rugrats about.
 
Well, blocks don't bother me. I clean & sanitize them before I put 'em in the block, but I generally sani them when I take 'em out, too. Still, I prefer a wall mounted mag strip for my knives at home. I like displaying them prominently but I'm a chef so that's probably just me.
 
don't the magnetic strips scratch the knives?
