Can I use oil tanned leather???

I have a few questions for the experts hear and I would like to thank everyone for their help in advance.

I have several small bushcraft knives 3-5" blade that I would like to make some sheaths for. I am thinking of a simple foldover pouch style sheath. Similar to the product that JRE Industries makes, I think they call it a gundy style.

What weight leather would you all suggest. Is 5-6 oz. heavy enough?

I would also like to know if it needs to be veg. tanned leather or can you use oil tanned leather and what are the drawbacks of using oil tanned.

I sometimes use oiled leather for carbon working knives and have used it as lining for vegtan when it's a carbon blade.

What is the difference between veg tanned and oiled tanned?
I am still very new to sheaths.
