I was checking out your website and came across pics of a kitchen knife site that I hadn't previously seen before.

Would you be able to provide some specs on the santoku and the paring knife? What kind of steel are you using, how thick, length, etc.
Do you by chance have any more pics of the Santoku? Maybe in hand or something?
