So how careful do I have to be with this steel from Eriksson? I have already flattened the spine and dipped the blade in water to keep it cool. I am currently accustomed to stainless steels like VG10 and CPM S30V. I do not let things sit around dirty or wet, but I do not want to develop rust or pits.

Do I need to pick up some Renaissance wax?

If it rusts (mine haven't), it will be surface rust, probably not pitting. That's easily wiped off. If you don't mind a patina, stick it in an apple, potato, lemon, mustard, or vinegar overnight. They all work well and will protect it from rust.
 
Carbon steel really isn't as hard to take care of as most people think, especially on a user. All I do for my Mora, Opinel and HI Baby BAS Khukri is periodically wipe them down with mineral oil. Both the BAS and Mora have gotten left in their sheaths damp and developed some surface rust, but I cleaned them up with some scotch-brite (after kicking myself in the behind) and they're fine now. I don't worry about stains and stuff, and they're all starting to get patinas on them which, as Sodak mentioned, will give them some protection from rust.

I use Min Wax, Flitz, Tuff Cloth, or Break Free CLP on my carbon blades but your Renaissance Wax should do the trick also.

I wouldnt pick up the Renaissance. It's a micro-crystalline wax that is expensive because of that.... NOT because it will protect wood or steel better. If you choose wax, I'd say get some Minwax from Home Depot.
 
just treat it like your stainless, and you should be fine.

if you notice rusting or anything (discoloration/patina is entirely normal and healthy) then step up the care a little. experiment.
