Greetings all!

First post! (had to get that out of the way)

I am looking for recommendations for a custom chefs knife. I am a lover of custom blades but work in an office and live in a city so I really don't carry much of a fixed blade on a regular basis.

What I do on a regular basis is cook. I am looking for a 8"-9" chefs knife that makes me happy when I pick it up to slice the morning onions for the omlete.

I'd like to keep it in the under $200 range.

Who would you recommend for this purchase? Pictures would be greatly appreciated.

I have a knife from Seth, and I'm very happy with it. He has a huge grinding wheel which does a beautiful, shallow hollow grind on a thin wide blade. Doesn't stick going through stuff.
Mine's ATS34 and is probably around 60RC.
His handles are ergonomic and nicely finished, and he dovetails his bolsters which is kind of rare these days.
He's a young guy who has over 1000 knives with his name on them. Definitely a promising up and comer.
