conxex grind sharpening

I am planning to invest in an edge pro apex sharpening system- will it wreck the edge of a convex grind blade, such as the F1 ? At the moment I am using the mouse mat method, but am not getting it as sharp as I like.I realise practise makes perfect but I've heard good things of the edge pro, and figure it will put new life into my (disgracefully dull) kitchen knives.
 
Well, what it will do is put a v-grind on your convex edge. If that's ok with you, then it'll work. I own a Lansky but I've never used the Edge-Pro. I suppose there might be a way to use the Edge-Pro to keep the convex edge, but my guess is, if you're new at it you'll end up with a standard v-grind.

IF it were me (and it aint), I might invest in an Edge-Pro (if I could afford it), but I'd use it on v-grinds. Then I'd keep working to get my convex edges sharp using the traditional method.
 
Like Stretch says, the Edge-Pro will put a V-grind on your convex knives - a very good V-grind, but a V-grind nonetheless.

Keep working on the convex bit. I think a leather pad works better than a mouse pad. And use a very light touch - no more than the weight of the blade. Especially with the mouse pad, it's very easy to press too hard and round off the edge.

Any system with a fixed angle will put a flat (or V grind) on the blade. That's what they are designed to do. A convex blade grind has a curve all the way to the edge. Somewhere someone had a nice cross section drawing of the Convex edge. A Sharpmaker will put a flat on the blade but I suppose if your really really good you could maintain a convex edge but there are so many other ways to do it that are easier. The Mouse pad or leather pad and sandpaper that many describe here works well.

I have a Sharpmaker. It's for V-grinds and it works well. I have read of guys here, though, that can maintain a convex edge using a flat stone (Sharpmaker, Edge-Pro, traditional flat stone, etc)
