Different Grinds

I am a relative quality knife newbie. I have been fortunate enough to receive the Hiker and the Kepheart from John and I am in awe of the two knives. I believe these knives have a convex grind. Can I get some advice on the different grinds and when each grind might be the best choice for a particular application. For example, I hear a lot about Scandi grinds, but I dont know what benefits one would get from that. Flat grinds, what are the benefits and drawbacks. Thanks in advance and if I can figure out how to create a siganture line, I'll add proud supporter of JK knives as well!

Here is my opinion on different grinds.

Scandi-Simple to sharpen(1 bevel), great on wood, very predictable when cutting, it has a long taper so it can get wedged in wood, doesn't cut thick material well due to wedging.

Convex-Splits wood better since it won't wedge as easily as other grinds, more forgiving when sharpening, More metal behind edge than similar Flat grind.

Flat-Doesn't get wedged as bad as Scandi, Can accurately change bevels easily, Hardest to sharpen freehand.
