Electric Sharpeners?

Anyone have experience/advice with any of the electric knife sharpeners? Chef's Choice, Waring, etc,?

They remove way too much metal, and don't produce a very good edge even at that. With proper sharpening by hand, quality cutlery can last a lifetime; electric sharpeners can ruin a good blade in short order.
 
i use the cardboard wheels if you want something electric. stevebot, a member here sells them to members at a discount. i have links at my website. once you learn how to use them you will get consistent results with little time involved. i suggest a slow rpm (1725) 1/2hp motor. less of a chance to burn the blade but wax that goes on the wheel helps minimize this from happening.
 
I have used Chefs' Choice for years with good results. Edge inspection with a loupe shows a very smooth surface, easily comparable to my Sharpmaker results.

I have used it only on my kitchen knives. I never pick up a kitchen knife without a steel, so resharpening happens once or twice a year. I don't shave or try to think of ridiculous tests to see how sharp my kitchen knives are. I use them to cut meat, fruit and vegetables. If my knives cut my foodstuffs easily and properly, they're sharp.
 
Do you notice it (which model?) taking away a large amount of metal? Ever use it with the Sharpmaker? I've learned enough from these posts to believe in first setting an edge and learning to use a Sharpmaker, then strop. Would a Chef's Choice sharpener set the right bevel angle to send you on to the Sharpmaker?

FYI - I'm 51 and have only (ever, ever, ever) used nothing but a 1970 model Old Timer Steel to help clean a million fish, skin about 40 Whitetails and keep my kitchen and pocket knives ready for use. So, being new to this site and to this depth of interest, I must admit I love soaking up all these opinions and good advice. I now raise a chilled glass of Makers Mark to each and every sole reading this post and wish you all the best this holiday season! Here's to sharper times in '08. aaaaahhhhh.

IMHO, if you want a power sharpener, get a HF 1X30 belt sander, and a selection of belts.

Hi Ben,

My only thoughts about a sharpener like a Chef's Choice 130 ($130+-) would be to use 1) only as a starting point for the Sharpmaker, mostly for my good kitchen knives and 2) for quick and easy touch ups for cheaper shop/work knives that get a lot of abuse.

But I guess a good sander would be a lot more versatile tool; lawnmower & bush hog blades, axes, wood, etc. Some old posts say that the Harbor Freight is not much of a work horse, do you know of others? I notice Sears offers a couple, what about the Kalamazoo?
