This is part of my life-long effort to have sharp knives with NO personal effort. I've tried several systems, including the Spyderco Sharpmaker and the EdgePro (similar to a Lansky in the came way a Piper Cub is similar to an F-16 - both of them fly). I am considering the following:
I've seen some good reviews on the Chef's Choice EC-110 (see at http://www.knifecenter.com/knifecenter/sharpen/chefs.html) on some cooking newsgroups. Does anyone here have any experience with this or some similar motorized sharpener? The problem I see immediately is the sharpening angle - since it's designed for cooking, the angle is probably pretty thin, possible 18 degrees or less, and probably not adjustable.
Any comments or harassments appreciated.
