Favorite Christmas cookies (recipe included)

Ok guys, in the spirit of the season throw all diets to the winds... What's your favorite Christmas cookie? Include the recipe.

Mine is chocolate chip:

1/4 cup butter
1/3 cup low-fat cream cheese
1 cup packed brown sugar
1 cup all-purpose flour
1/3 cup flour
3/4 teaspoon baking soda
1/2 teaspoon salt
1 large egg, beaten
4 tablespoons coffee liqueur
3 tablespoons instant espresso or instant coffee crystals
1 tablespoon ground coffee
1 package dark chocolate chips

Preheat oven to 350 degrees F.

Lightly spay baking sheets with non-stick coating.

In a large mixing bowl, cream butter, cream cheese, and brown sugar on low speed with an electric mixer. Add egg and liqueur and mix on low until just combined.

In a medium bowl, combine remaining ingredients. Add to butter mixture and mix by hand until combined. Portion heaping teaspoonfuls (or use a 3/4 ounce scoop) onto baking sheet about 1 1/2 inches apart. Bake for 7 minutes. Lightly flatten cookies with finger. Rotate baking sheet and bake an additional 3 minutes.

Transfer to wire rack and don't burn your fingers when tasting!

Yummm - how do you have any ofthe dough leftover to bake - I'd end up eating that whole bowl raw.

My fav is:

Oatmeal, Raisin, Chocolate Chip Pecan

2 1/4 c. flour
1 tsp. baking soda
1 tsp. salt
1 c. butter, softened
1 1/4 c. brown sugar, packed
1/2 c. granulated sugar
2 eggs
1 tsp. vanilla
1/2 tsp. water
1 1/2 c. oats
1 c. golden raisins
1 c. chocolate chips
1 c. chopped pecans

Stir together flour, baking soda and salt. Cream butter with sugars until light and fluffy. Beat in eggs, vanilla and water. Slowly beat in flour mixture. Stir in oats and raisins. Press into average size ice cream scoop or 1/4 cup measure and drop onto foil-lined baking sheet about 2 inches apart. Lightly press down with fork into 3 inch circles. Bake at 350 degrees for 12 minutes. Do not over bake. Carefully transfer to baking racks. Cool. Store in airtight containers with slice of bread (change every 2 days) or freeze up to 1 month. Makes about 2 1/2 dozen.
 
I only know how to make two kinds of cookies, snickerdoodles and chocolate crinkles, which you probably already know how to make. They are both fool-proof, even for a baking-challenged person such as me.

My favorite holiday cookie is seven layer bars, but I'm too lazy to make them myself. So I just pack them away whenever I can find them made by somebody else...:D
