For a user any of that ole ugly man made stuff 'll do. (Micarta, G10, fill in the blank) or I would consider a nice wood depending upon the use.
One for my collection would have to be natural. Stag, pearl (on a price type), stone(jade for instance), ivory, nice burled wood.
