Cut up some deer steaks this evening and gave the HR a test drive to see what she'd do. I am impressed. Even though its thicker than most deboning knive it worked well. Handle grip was solid even with the blood and meat. Can't wait till my Bandicoot arrives, it has to be even better.
*Tip* Last year I found best way to "clean up" deer back straps for cutting steaks was to use a fork. Tears the grisle/tendons off without losing alot of meat.
