Got an old Sabatier

Over the new year holiday I went to Sacramento for a wedding. Afterward we stopped at my wife's cousin's house. My wife's cousin had this old Sabatier that she decided she didn't need, so I was able to take it home. Blade is just under 10".

Wow, how can you "not need" a knife like that?

Carbon steel will sharpen up easily.
There is no pitting.

That is a gorgeous knife. I love the size and blade profile. Looks like it needs a little re-profiling near the heel but after a good sharpening session that knife will be ideal. What a great thing, for something like that to move into the hands of new owner who appreciates it!
