WARNING:If you have never taken a small mechanism apart & reassembled it back to working order, then this solution is not for you. It should also be noted that the hollow space on the scales, where the omega or Axis springs reside, should be left alone.

First, disassembled the knife until you have both scales free of all hardware.

The inside face of the scales, is hollow with a criss cross pattern of walls. This pattern forms many small empty cavities or what I will refer to here on as "cups". These "cups", that are both beside and under the liners, are what give the knife that loud hollow sound when you close it.
So, theoretically if the "cups" were filled they would make no noise, right? Now, I have no doubt that there are many materials available that would work just fine for this application. My material of choice was a commercial grade sealant used for the installation of automotive windsheilds. It's Black, light weight, waterproof & dries quickly.

Next, fill all the "cups" up to level, or close to level, with the sealant. Care should be taken when filling these "cups" to level, for the following reason. The liners are mortised or nested into the scales. So, there are two levels of "cups" present, on each scale. The guideline should be: Do not go above any walls top edge when filling these "cups". Make sure there is enough room for the liners to fit back into the scales.

You're almost done. The sealant will dry in minutes, then all you do is reassemble the knife & "TADA !" The sound is gone. I'm sure there are many other ways to do this, but this method worked just perfectly for me. I hope this helps you or someone else enjoy their knife just a little more. I know it has workrd for me. I agree, the hollow 'clack' is annoying.

I also modified my Ritter Grip.
I added some lead weight to several pockets and then sealed it in with epoxy.
The knife is now better balanced as well.
