How can you tell the difference from the Hinderers with the CNC blade and the ones he hand ground. I saw 2 hinderers for $700 each but did not pull the trigger because I was affraid they were the CNC blades. They are sold now. How do you tell?

Price is usually a big indicator. The ones you saw were most likely standard cnc'd XM's. If you want a hand ground blade, you need to track down a custom XM on the secondary market. Visually, hand ground blades can be recognized by the satin finish they usually have. Most of the mid-tech XM's have a stonewashed blade and some have a beadblasted or sandblasted blade but are less common. Just be aware that a custom XM will cost significantly more. That being said, the mid-tech (production) XM's are incredible knives that are built just as well as the customs using mostly the same components. Usually, the blade is the only major difference.

Seemingly simple question, but complicated to accurately answer.
Customs will most often be described as such. Many have unique blade shapes not found in the production runs. A Gen 3 3.5 slicer can be a custom while a Gen 4 3.5 slicer can be a production. You kind of have to know what was offered as a production item, when and so on.
Several customs have unique and/or annodized pieces, parts, scales, etc. that are offered only in the aftermarket on production models or not offered at all.
There is far more information out there related to your question. I hope this thread gathers a bit of it.

A custom is fully handground and sharpened by Rick a production is CNC'ed and only sharpened by Rick.

Like someone said before mostly they have a satin finish vs stone wash or bead blast, that's easy to tell and obviously certain grinds are not available as a production, they are even easier to spot.

Don't get caught up in the finish, as already stated, customs are hollow ground, productions are flat ground.
