The factory grinds were a smigeon different so I settled on the medium of 19 degrees ;) I spent a good amount of time with a sharpie determining which way to go before I went all in . . .

Looks great. What angle do you sharpen to?

Just out of curiosity, what advantages does a polished edge give over a standard non-polished edge?

Edges are much like a choosing a knife for a specific purpose - you choose the edge for the job. This is not a tough edge. It's set at about 19 degree each side but she tops loose hairs. Sometimes a rougher, highe angle and more toothy edge is best suited for a certain job so I'm not really sure you can say what advantage a low-ish angled mirror edge has except for superb, smooth slicing capability. I sliced a super ripe tomato with this knife at my desk today and the blade basically fell through the tomato from the gravity :D Don't let anyone say a Hinderer designed ZT isn't a slicer. With the right edge, they do ;)

Guess I need to stop buying knives and get a great sharpener.:o
