Is there any to tell the difference between stainless damascus and high carbon?

I recently bought some Devin Thomas damascus on an online auction. I was told that it was high carbon, and made 2 blades out of it. I then heat treated them today in my normal way. Preheat to 600 deg, then heat to 1500 for 5 min or so and quench in warm oil. Took them out and they had no scale and were still somewhat shiney? Ran a file accross the blade and it kinda dug in, so I wraped them in stainless heat treating foil and put them in at 1850-1900 and then quenched them in oil, the file skated right off of the blades. I wanted to know if the stainless will etch, or polish up differently, and if I can use those to tell? I'm not sure that I like using stainless damaccus?

I got some High carb damascus from Devin. nice stuff. brought to non mag, quenched in oil, tempered at 400 like he said on his website, man, that stuff is nice!!!

Try some cold blue, carbon will blue
an stainless will not
