Knifemaker for my fixed blade (16,5cm)

Hello everyone,
I'm from Germany and since we have very few skilled knifemakers here, I have to widen my sight a little.
Basically, what I want design-wise is the ESEE Izula, I have three of them and I absolutely love them.
The only 2 things I want to be different are the blade (I don't want the fingerguard and the choil on the original) and the skeletonized handle (I just want the finger-hole,nothing more).
I am going to use this knife, I will have it with me every single day and I will also be using it for prying chores, that's why I want to be sure that it does not break on me.
The reason I'm putting so much emphasis on this aspect is, that I already managed to break a pretty big piece of tip from another custom knife I have that I used to pry an arrow out of a tree.
I already have a knife that looks exactly the way that I want it to look, so I can send pictures if needed. The bladesmith did an overall good job with this one, the fit and finish are not 100% perfect (the ricasso? is a little unbalanced) and the blade itself is a little too thin for my taste.
I need some advice concering the steel of choice (the one I have right now is a Sanmai) and which heat treat you recommend (differentially hardened or not).
A simple leather sheat will do the job, but I can also take care of that myself.
I'm looking forward to Your answers.

I can make pretty much anything you want. For prying I would use 5160 with a very thick/heavy point. I have this steel in 3/16" and 1/4" thicknesses. I also have some 3/8" thick L-6. With the right point you wont break either one of these especially the L-6. Send some pics of what you want and I will give you more input. Thanks,
