I assume that your comments regarding security were concerning cutting chores. What about stabs? Can you do hard thrusts without your hand ramping up onto the blade? How about when your grip is compromised with oil or soap.

Approximately to what angle is the edge ground?

Cliff, yes, I was referring to a good, secure grip.

As for stabs, no, I haven't tried these yet, but considering the blade shape, IMO, would not be as effective as a tanto or wharncliffe. That is to say, that it is not impossible, just more difficult.

As for the angle of the edge grind, I haven't measured this. All I do know that it cuts well.
