Last weekend I made a Dutch Oven Pot Roast and desided to test out my new knives to see how they did. The Tasks included cutting carrots, potatoes and onions. Even thought the CT would cut the carrots, it took more effort then any of my hunting knives and didn't make clean cuts. It cut part way through them then the carrot just broke apart. Also, it didn't fair well at all against the Potatoes. IMO The edge is just to thick to make it a good kitchen knife. It does do good as a cleaver and "Field knife", So I plan on pairing it with a SAK and or Western Brand Hunting knife.
The Edge developed a little Patina which I like. How can I go about removing the coating with out scraching up the steel? IE with out sand paper or sand blasting. Is this even possible?
BTW Saturday there was a "Bump in the night", there was a couple of knives on the table by my bed so I grabbed the CT and ran out to see what was up. Thank goodness it was my Sister inlaw (I live with my older brother and his family) who had gotten up at 5:00 am and had accidentally knocked something over. It sure felt good knowing that my CT was there.
