Old Hickory Kitchen Knives

I apologize for putting a non-Schrade post here, but you'll understand my intent shortly.

Since we are Schrade-o-holics, it follows that our favorite steel is what? 1095, of course.

Earlier this year, I was cleaning out mom and dad's house, and came across the kitchen knives that my dad used. (Some of you will remember from my previous posts, that mom and dad owned a grocery store in a small town in Georgia, and dad ran the market. So, I trust his knife preference. Also remember that his dad was a blacksmith at the turn of the century, and dad worked in the blacksmith shop from a very young age. Are you beginning to understand the reverence that I hold for him?)

Anyway, back to dad's kitchen knives - There were 4 of them - An 8" chef, two 6" butchers, and a 5" boning knife. I brought these back to my house and was totally amazed at how they took an edge with no effort at all. In fact, I almost cut through the palm of my hand after just a few passes on a benchstone because I did not realize how easy they took an edge.

I've been using these knives for 6 months. It's hard to describe the pleasuare that I get from them, but I have no doubt that most of you will understand and appreciate the feeling that rushes through me each time that I wrap my hand around those Hickory handles and pull one of the those knives out of the wood block.


I did not have a matching paring knife, and I had sort of dismissed it because I assumed that these knives were no longer available. Imagine my surprise today when I had some free time and did a Google search for "paring knife wood handle 1095 steel". The first hit on the list was Ontario Knife Company. I clicked the link and OH MY GOD, there they were!!! The four knives that I got from dad's house, plus the matching paring knives that I wanted. KnifesPlus.com carries this line, and they dirt cheap.

So, to get back to why I'm posting this. These knives rock. They are totally old-school 1095, and they cut like a bat out of hell, just like our favorite Schrades. If you are looking for kitchen cutlery that will put a smile on your face, give them a look.

Smokey Mtn. Knife Wrks. has them in the current catalogue. The are either seconds or unsharpened in 6" or 8" lengths for $2.99.
 
And they are still Made in the USA (unlike Chicago Cutlery, which are now imported from China). Can't beat the price either. A five piece set is $22 at One Stop Knife Shop.

Old Hickorys are good kitchen knives. I brought home the paring and butcher knives and tossed the stainless imported stuff quite a few years ago, at the same time the teflon pots and pans went to the dump and the cast iron was bought. I think I got our knives at Wal-Mart, some still carry them. And yes, they will take a razor edge and a beautiful patina. I was also surprised they were still made (three or four years ago), as these were the knives I grew up with. The wife still took my 140OT Trail Boss as her favorite for cutting chicken and beef.

I looked for Old Hickory the last time I was at WalMart. They don't sell Old Hickory any more - switched entirely to CCC.
