Might I intrude, I usually ponder the Axe forums...

Picked these up today. Google isn't finding me much on these models though. Any ideas on them? Appear to be full flat ground and the handles/brass pins are solid so I don't think I'll be hacking them up anytime. Slicer (style name ??) and bread knife.

the serrated one is not a bread knife
7340-680-0863
It's your basic Military contract Meat Slicing knife;

The other one
7340-291-0625
Knife, Steak Scimitar, 10 in. (81348)

The numbers are NSN { National Stock Numbers }

These would be basic load out items for Army / Navy kitchens; or other groups able to purchase under Govt. Contrat.

That's pretty cool. Since those have plastic handles, any ideas when they stopped using wood/brass? I'm thinking they can't be too old since the metal is in such good shape.

These are pre 1974; they may have been laying around in a wharehouse for a long time.

After 1974 the 11 digit number was upped to 13 digits to allow for more items

7340-291-0625 became 7340-00-291-0625

Not bad age. These look unused so they were laying around somewhere!

Thanks for the info, OldNavy.
