I love my Opinels and have been using them every morning for about 3 weeks now to cut up peaches for breakfast (my wife got a big box of peaches). The Opinel No. 9, that I honed to razor sharpness is excellent for this. After cutting the jucie peaches I wash it out with hot water, including rinsing out the pivot point, where the blade is attached to the wood. It swells every time after, sometimes to the point that it needs assistance with pliers to open the next day, but most of the time not, it's just stiffer to open. Wetting frequently has not hurt it in any way. I live in a very dry climate here however, so within a few days, no matter how wet it was it shrinks back to an easier opening state. Actually, I prefer harder opening Opinels, 'cause some of them get kinda loose and open too easily (and don't remained locked closed) after much use. As standard practice now I put a lot of boiled linseed oil (BLO, you can get it at Wal-Mart or other paint depts) into the pivot to help seal it up.
