Sharpening Knives

I know this will seem totally stupid, but what are the best ways of sharpening knives. I own several very good makes and types of knives, such as benchmade, opinel, victorinox, etc., but as I use tham at my workplace (opening pallets/boxes etc.), they have all become blunt. I would just like to know how best to sharpen them. What is the best mathod, and what is the best technique. Please answer as I love knives, but I am considerably uneducated as to their finer points. Also, if anyone has any useful U.K. knife manufacturer/retailer links, I would be very grateful. As the factory manager at my workplace, I have promised all my employees good quality knives as opposed to replaceable blade types, which had a good response (factory use only, with an audit check every night.), but I have to plead ignorance to the sharpening side of knife.

Hey, Guitar, if you do a search on sharpening, you will find that there are probably more opinions on how to sharpen a knife than there are knives. I have used a variety of methods, and the one that works best for me is the Spyderco Sharpmaker 204. I won't extoll its virtues here-- a search for sharpmaker will turn up more information that you want.

Does anyone think that there is anything better than a Spyderco Sharpmaker 204 for a beginner?

You might wanna try www.toolshop.de and www.heinnie.com (heinnie haynes is expensive but fast and convenient if they have what you want in stock, toolshop is cheaper but will take longer)
