I am seriously considering getting an uluchet or small folding hatchet for backpacking carry. Recommendations ?

The ulu is excellent for cooking and I've seen one or two that are outstanding tactical tools as well. They pack really small, but you do need a very reliable sheath. I'm not big on a folding hatchet. I'd prefer a fixed one like a Lightfoot or even a Strider, but there are many good ones. You can carry it lashed to your pack, but usually i just take a bigger knife like a Busse which serves almost as well [for light chopping] and is a little easier to pack or carry.

Here is Cliff's review of an uluchet http://www.physics.mun.ca/~sstamp/knives/uluchet.html

I bought one, alas I have not used it on any animals yet. My thoughts are that if you want a tool to help field dress a large animal like an elk or moose, AND use it secondarily as a wood cutting too, this will be excellent and you can use your knife for cutting and slicing. Otherwise go with a hatchet. He makes a belt-on kydex sheath that is very sturdy and at one time it was cheaper to buy the uluchet with kydex option rather than get the kydex as an option later. His customer service is excellent too. I had a problem with the first one, he told me there had been a problem with a batch of them and gave me an option of replacement or full refund. He sent the replacement and told me to use the defective one for a while before returning it for his inspection. If i remember right, it goes 13 oz with the kydex sheath.
Feel free to email me if any other questions.

I agree. The edge geometry is better suited to field dressing game than chopping wood. However, it is a sturdy little tool and VERY sharp. The company is great to deal with.
