Someone gave me a V- Sharp for Christmas and it just seems to raise a burr on one side of the blade. I have the 300 and 600 rods, just wanted to mention that.

Can anybody here give me a hand on how to use this thing!
If I remember somebody had one on this forum. I also know about the scratches it can leave on your blade. Advice on how to use this thing correctly would be helpful from who ever had one.

If you want to prevent the scratches, you need to tape both sides of your knife. Painters tape works well-the blue stuff-tape it above the edge.

To use it, place it on a table in front of you with the adjusting knob on the right hand side.

Adjust the bevel-the "V" to line up with the right hand guide-the black vinyl coated loop.

Draw your knife black from the handle to the tip while gently applying downward pressure and holding the knife vertical. Use the 300 grit for dull knives, first and then the 600 to finish it. If the knife is slightly dull, you can use the 600 grit to touch it up.

The sharpener works, but it is difficult to get close to the handle with it. It helps if the knife had a sufficient space between the handle and the start of the edge grind like a choil.

Practice with cheap knives and kitchen knives. It is easy to mess up before you get the hand of it.

I don't particularly like it and only use it on kitchen knives and less expensive knives. However, it will put and edge on a knife pretty quickly.
