What are you slicing the turkey with?

I'd like to see some pictures of what is going to be used on the turkey on Thursday. I know that nobody on this forum is going to stoop to using an electric knife. If you are supposed to ship it out next week, just stick in a note telling them that the turkey fat is a new preservative that you are trying out. He'll understand completely and appreciate the aroma.

Hadn't given it much thought but I do have "chef" by Daniel Koster.

I fact I must have been thinking about it because I just sharpened it yesterday along with a couple from Murray Carter.

Yes, they have a use where portable bandsaws would be impractical, like steaking up halibut.:D

The only knife necessary for good bird chunks is a 7"+ slicer that is SHARP....like the sharpest that you can get any knife. Rigid or flexible is entirely a matter of personal choice.

8 inch Henckels chefs knife that i bought my mom a couple of years ago after getting tired of looking at the crap stuff she had in the block.:D
 
Will try to get a pict on Turkey day , but I think it will be between a Blackwood Custom Henchman or a modifed by me flat ground ( way thin edge ) Strider WP.
 
I plan on using a David Hanson (Don's brother) chef knife. The 8-inch blade is rehardened crosscut saw blade steel. Osage orange handle. David makes a nice knife. Should get the job done!

I hope that I will not be cast out of this forum in disgrace If I admit to using a <gasp> production <gasp> knife for turkey carving.

I really like the Kershaw/Kai Ken Onion-designed shun model. It amuses me greatly to see how thin I can slice the bird while everyone else waits (im)patiently. I will admit to needing help in this delicate surgery. This year, my assistants will be Dr. Clyneliesh and Nurse Glen Elgin. :D
 
I will be using a carving set made by a newer maker Tom Goodpasture who lives near me and studies under PJ Tomes.
