Any suggestions. I would prefer production knives and no they do not have to be kitchen steak knives....

I picked up some Tramontina steak knives at a kitchen supply place at the local factory outlet center. I think they were about $2/knife. Nice serrated blade with a bit of a recurve, laminated plywood handles that look like rosewood and are dishwasher safe. So far they have held up very well, and they cut like crazy. If you wanted something a bit different, you might want to look at the stiff kiss from CRKT. I don't think it would be any trouble at all to put handle slabs of your choice on them.

The best is when the knives at the local steakhouse are as dull as butter knives. Then I break out whatever folder is on me, and cut up my food! My wife just rolls her eyes  Ya gotta love it! I don't care if the waitress sees, get some SHARP KNIVES and I wouldn't do it!

I picked up a set of Laguile steak knives at a bargain price in Bordeaux two years ago. They are really great; these days they are fairly widely distributed in this country as well. The materials and worksmanship is first-rate and they cut superbly.

I like to use stainless steel steak knives with metal handles. That way they can go in the dishwasher without extra concern. Currently I am using Carvel Hall "Byfield" pattern since I find the narrow blades useful for low-drag cheese slicing. The blades are easily sharpened and take a keen edge. I prefer not to have a wonder alloy for steak knives since that will increase how much they scratch the china. Here is a Carvel Hall link:

My Strider BT w/ Spine Serrations. Useful for killing and butchering the cow, as well as cutting the steak when it's all over! :D ;)

TNT, what else??:D

I used my small hawkbill TNT to assist in getting all the meat out of some king crab legs the other night. Did a great job slicing those legs open :D

Forschner makes some rosewood handled steak knives that will shave right out of the box. They come in either a sharp point or rounded nose model.
