I picked up and old cleaver out of a pile at a flea market. Due to the patina I suspected it was a carbon steel knife, and the internet seems to agree.
What I have is stamped with "Three Rams Brand" as well as the style and the number 2.
What I have not been able to find online is the company, or any specs about the knife.
Depending on the type of steel I will either reshape the bevel to remove some chipping, or recycle into other knives.
If anyone has any information guesses I would love to know.
P.s. my kitchen doesnt really need another good cleaver. I want to recycle into other knives but wont bother if I don't know the heat treat or quench.
