I'm offering this western style gyuto for sale. The Redwood Burl has tons of eyes and great coloration. I paired it with ancient Bog Oak bolsters and copper pins and corby's. The liners are black and white G10. The grind is full flat with the lower portion convexed down to 0.006". It's tapered distally and the blade is hand sanded to 600 grit.

OAL:
317mm (12.5")
BLADE: 190mm (7.5") long, 45mm (1.8") heel height, 600 grit satin finish, 0.006" edge thickness before sharpening. Spine and choil are rounded.
STEEL: 0.10" 52100 heat treated by Peter's to RC61
HANDLE: Stabilized California Redwood Burl, Stabilized ancient Bog Oak bolsters, black and white G10 liners and copper peened pins and corby bolts.

Received the knife and could not be more happy with it. Fantastic in all respects, definitely will be watching for more of your knives in the future. Oh, and packaging/shipping was impeccable as well. Now, if you could just keep my wife away from it..... she was putting it to the test last night and commented on how good it is.

Very glad to hear it! I've got a Nitro V slicer that's coming down the pike. I'm contemplating what handle material to use.
