01 Heat Treat

58 RC. I know they can be done harder, but I feel that this stands up better to hard use.
 
As far as how easy it is to sharpen/fix from damage or holding up to long use?

My Knatchet seems to hold it's edge well although I haven't given it as much use as say my Hiker in 1095 steel yet.
I did roll the edge very slightly on some real knotty wood(hardly see it but could feel it with ya fingernail) and it sharpened out in no time on some wet and dry !

In my experience with custom makers, 56-58 are a great range that gives you steel soft enough to sharpen and maintain, but still hard enough to hold up to a lot of use.

I do have a question for you on this, though, John--do you think on my design for June you could harden it more in the 60-62 range? It'll never see duty outside of the kitchen, so I won't need it "chopper tough"
