Whatever you feel will work best for you. Be prepared though, it'll take awhile on the lansky! That's a lot of material to reprofile. Personally I'd go around 20*.
I did mine at 19 degrees per side with a 20 degree micro-bevel but if you're reprofiling on a Lansky, then you'd better have diamond stones or be prepared to be there a while.
Just copy the existing angle and add a micro bevel. Guessing at the angle with random settings might work, but then again you might end up making th bevels look all ragged. I have a Lansky clamp system and I have not used it much since I bought it.i much prefer to match factory angles on the Edge apro and then use the Sarpmaker to create a small microbevel.
rmeron, use a Sharpie to color the bevel, start with the 20 degree slot on the Lansky, make a few passes, then look and see where the stone has made contact and removed the ink. Adjust as nessary.
30 inclusive keeps her hair popping for me..No chips, no nicks, and no errors..I believe they are sharpened at the factory by hand, so factory edge may very..
my 0561 i use for work gets a convex edge from 17-20 degrees for retention, my 0560 or cbcf that I use outside of work (cuts no where near as many things) I just do a straight 15 degrees per side for the sharpness.
