Anything at that price range I wouldn't be splitting hairs about steels.

There is no carte blanche on the HT and Geometry to actually make one perform better than the other.

It's like asking which soapbox car would run the Indy 500 better.

Just pick whichever one is cooler.

Do you think those knives will come with the steel they say? Do you think they import German stainless steel to make extremely inexpensive kitchen knives in China?

Hint: no.

The 1.4116 is likely 5cr (if you are lucky), which isn't as big a number as 7cr so go with that one. But seriously, save your money up and buy something from a reputable source.
