Recommendation? 1 degree bevel on disc grinder?

I've been looking at Tru Grit's disc grinders pretty hard lately. I notice that they offer a disc with a 1 degree bevel? What's that about? Would I need both?
I'm mainly interested in this to help smooth out larger kitchen knives and such, but I imagine I would also be using it on smaller knives and bolster/multi part handle stuff.
 
When the blade is longer than half the diameter, it tends to drag on other side. The 1⁰ bevel allows just a tad of clearance for blade.
 
Ok, so the disc has a bevel from the center to the edge? Kind of like a very slight cone?
I had it in my head that the whole disc was tilted 1 degree and couldn't figure out the purpose.
 
I saw that, but moved on since there was no pricing posted. I guess I'll send an email.
 
I'll have to remind him to get that included.
He may have one of his Daughters , Ashlee, answering some on the web site. He's a heavy duty mechanic who loves to see his kids doing something besides school. Ashlee is a first class lady !
