I started sharpening with Arkansas stones many years ago, then tried diamonds and finally settled on Japanese water stones. Recently I purchased some folders with 1095 blades that needed to be sharpened and I decided to break out the old Arkansas stones. After only a short while with the soft Washita and black Arkansas, those 1095 blades were super sharp. I still like the water stones but I think I'll stay with the Arkansas for 1095...two stones and a strop and they're good to go.

I use Arkansas stones with oil. I want to get the fancy Japanese water stones. But every time I look at the price, I think I should spend that money on a new knife. After all...if Arkansas stones were good enough for the last four generations of my family...
