1095 nessie

Wondering if anyone can chime in on the best care for 1095. I have a 1095 nessie and i use it to cut up a lot of vegetables and othe cooking tasks, it shows a lot of staining on the steel, should i hand sand it, is this normal? Any advice is appreciated. BTW I love the knife it is so easy to sharpen and cuts great. Thanks in advance!

the staining is patina and you CAN sand it with 600 or 800 grit wet/dry. Personally, I would leave it as it gives it character. Just make sure you clean it real good and put some lubricant on it before storing or it might start to show surface rut.

Thanks Brett. I will sand it some, tomatoes definitely cause it to petina more and super quick, I am assuming its due to the acid. Thanks again.

hey there. Yes, tomatoes will do the job. Just try mustard...:thumbup::thumbup:
If you use your nessie a lot, it will develop a patina. Actually, a lot of folks believe the patina is good for your knife in that it protects it from rust.

Lemons do the trick too!

The patina is a good thing in the long run, but if you want to take it off then a green scotchbrite pad works well.
 
I love the scotchbrite pads...and used that as a final finish for all but the scandi-ground knives.

As long as you wash with hot, soapy water...any tarnish is harmless, but attractive patina. :thumbup:
