Can anyone recommend a kitchen knife set made of 1095 (or similar) kitchen knife set. Looking for a traditional knife design.

Old Hickory?

I looked at those but they are not exactly a traditional kitchen knife design, didn't really care for them. I do appreciate the response. Unless they have others I didn't see. I'll do another search to make sure.

I guess it depends on what you consider traditional, IMO Old Hickory is as traditional as it gets, 1095, takes a wicked edge and is very reasonably priced!

I don't see what I consider a traditional Chief's knife and I use that pretty much more than any other knife in the kitchen. But you are right, it's in the eye of the beholder.

Well there is, "traditional like my grandma used" and "traditional like pro chefs use." Covers a lot of ground.

old hickories are north american butcher style knives, I think if you want carbon steel french style knives, or japanese style, you'll have to pick them up piece by piece like the pros do.

Get Joe Calton to make you a set. I have a 1095 chef and paring from him and I love them. Russ
