For a japanese style heat treat, I just finished a short writup on it with pics. http://www.freespeech.org/oz/projects4.htm
For a more standard heat treat, anneal it first, then heat it to non-magnetic, no soak time, then oil quench in light oil. I usually use olive oil, heated to around 110-150f. Then temper at 350-400, depending on it's use. I triple temper and seem to get better results that way.
Hope this helps.

Now, what other news did I have? Oh yes, IT'S A GIRL!!!

I put my 1095 blades in
stainless steel foil to save
on sanding afterward. Then
they're loaded into the kiln
and brought up to 1500°F and
held there just a little to
make sure the knives are
actually up to that
temperature. Then I cut the
foil envelope and remove the
blade and quench in a can of
olive oil. I quench the
whole knife for the type I
make. 1095 steel has to be
quenched rapidly to get
fully hardened. Then I wash the oil off and
blade is tempered anywhere
from 350°F to 600°F for an hour or two
depending on what its used
for. Good luck.
