Hey there

After doing the 8" santoku a couple weeks ago I had a customer ask for a 10" french pattern

this is what I came up with

it is 10" long from bolster to tip
center of balance is on the "w" in my mark
weighs around 8 oz
the spine is .09 thick (a 1/16 is .0625) for fun we took another photo showing the spine with a .05 guitar string.
Handle is Cocobolo

I think this is the one heading to me. I am very excited about it and will post more once it arrives and I get to put it through its paces.

I received this knife yesterday and spent a good part of today slicing and dicing. I have to say I am as satisfied as I can imagine. This knife is as sharp now as it was when I started this morning. The workmanship is excellent. I was surprised it was a hidden tang at first but it makes complete sense as the knife is perfectly balanced and there are no boundaries where food or bacteria can lodge. At first the knife seemed lighter then I was used to but I put it on the scale and it weighs about the same as my 50+ plus year old frenchie knife of the same size. I think it feels lighter because it is so well balanced. I was originally concerned when talking to Stephan that it might be too flexible as the steel is quite thin but it is plenty rigid, in fact more rigid then my old french knife. I cant say enough good about this knife. I have been after a 10 inch french pattern to replace my antique one but none ever felt quite right. Well my search is over finally. If you get a chance to get one-then go for it. If you have any doubts pm me and I will send you some action pics or what have you. Thanks Stephan.
