117 Small Special trimming brisket

2184DE35-A409-42E7-BA34-B6E6057AFA60.jpeg I started trimming this brisket and decided to try the 117. It worked great! Just the right size. I’ll try to post a after picture, right now I have a mess to clean up as I spilled the brine all over everything. Lol. I’m glad I had more ingredients!
 
Blame the spill on the goldfish, cat or the new poltergeist (whichever you have) so your "better 7/8" don't think your a klutz in the kitchen. :)
Well I am single and live alone now so I have to clean up my own mess and take the blame. Lol. It could have been worse if the brisket was ruined but it was safe on the container lid. So my kids and their families will have something for dinner Friday. But I am a klutz at times.lol. I’ll try to get a picture tomorrow when it goes on to smoke.

I can squeeze you in but you’ll have to be kid friendly. :D With my four grown kids and ten grandkids it will go fast and they get feisty when they’re hungry. :D

of course, but being about 1600 miles and around 24 hours driving time away dont think I'd make it in time for even the table scraps.:)
 
If that's the 933 from Buck's kitchen set and your 117? Then I see. The 933 is only a 4" blade and your 117 is a 4 1/2" blade (I think), this makes the 117 look good. Buck did not put a decent boning blade in that set. Thus, I use the 6" Empress Trio boning blade for trimming a brisket. DM
 
Even without your 117 being real thin you thought it worked well? Good to know. Some of these knives with good geometry will
surprise you. DM
