Which ones are not stainless?

What about the one Ive seen with the orange handle?
 
I don't believe any of the Schrade Walden 165OT or UH are stainless. And the regular production 165OT are still 1095HC carbon steel up through their last production in the early 1990's. Most of the later produced SFOs and limited editions used stainless blading. There may have been two orders for the 165SM, or "Deerhunter" orange Delrin handled 165OT made for Smoky Mountain Knife Works, with the later one being stainless, but the first order was carbon steel in 1992. The second ('94-'97) and third productions (no shield) of the 165UH Prospector version were, I believe, 440 stainless. If, and I think there was, a second run of 165SM was made after the mid 1990's, it would likely have had stainless blading also. Generally speaking, 165 pattern knives made after that period will have hollow grinds, and be stainless, with SCHRADE+ designation, a fairly reliable indicator that a knife is stainless (the absence of the '+' does not necissarily mean carbon on the earlier knives).
