Here are a couple kitchen knives I just completed for an order. The chefs knife was ordered an inch shorter than stock.
Chefs: 6" blade, 11" overall and .118" thick at ricasso
Paring: 3.5" blade, 8 3/8" overall and .062" thick at ricasso
Both:
ATS34 stainless, Cryo hardened and tempered to 61RC
600 grit hand rubbed satin finish
Stabilized figured walnut scales and stainless pins
