$200 for a quality kitchen knife, which brand to buy?

I want to buy a quality jack of all trade type of kitchen knife and I have $200 budget. Any suggestion?
 
Stainless or carbon? I have heard good things about the Misano UX-10 line which is AEB-L
 
check out the harukaze 210 gyuto, its well under your budget, great steel and its stainless clad, takes a great edge and a very solid built knife
 
Jack of all trades....you should first choose if you want a Gyuto or a Santoku. I use my 210mm Gyuto for just about everything
that doesn't need a parer/petty. Then decide if you want Stainless or Carbon steel. At that point you can start narrowing down
the options.
 
In my experience, my F. Dick Competition was a revelation. I absolutely love that knife. Friedr Dick makes really excellent knives.
