I may be incorrect (feel free to set me straight), as I'm a new CRK owner but its my understanding that no knives/parts are blasted as part of the "spa treatment", its a simple cleaning/lube/sharpening, to have a handle re-blasted is a separate service and costs money. Now perhaps its true the service isn't available to inlaid models (I have a non-inlay'd version) but again from my understanding it's not offered, even to the models which can be re-blasted, as part of a [free] spa/warranty service....I used to baby the 25, too, until I decided to just use it. And I'm glad I did. If I need it to look brand-new again, a trip to CRK for their "spa" treatment will do that, which cannot be done with their micarta-inlaid models like my 21s are.
From my understanding, they do not re-bead-blast their inlaid models as part of their spa treatment, if that matters

I find myself leaning towards the 25
25 was my first and I really like my others but if I had to do it again I would still pick the 25. Now between the 25 and an Umnumzaan I would pick the Zaan. But your question was between a 21 and 25, in that case I prefer the 25.
Where to buy? If funds are tight pick up a like new one here on the exchange. If you want new buy from an authorized dealer. CRK website lists their authorized dealers.
You really can't go wrong with the model you choose.
