Made this for myself, mostly because I’ve never owned or used a kitchen knife this large and wanted to give it a go, and also because someone absconded my last one.
Happens to me a lot, I’m afraid.
The blade is .105” thick Crucible CPM-Magnacut, zero ground with a predominately flat grind that gently transitions to convex as it approaches the edge. I left a touch of rolling mill scarring on each side, mostly because I like the look a bit, but it’s been a polarizing detail. Those that don’t like it, really don’t like it. Too bad, it’s my knife.
The bolster is black Richlite, with an anodized titanium spacer that’s been rounded and left slightly proud of the surrounding handle material to draw attention to it. The rest of the handle is a recent experiment in carbon fiber layup techniques. A core of Terotuf forms the structure, then I sleeved that form, with the butt being capped with a section of T1000 grade carbon fiber sheet, saturated it with resin, and cured the entire assembly under vacuum. The result was a unique aesthetic that is almost entirely free of voids (more so, in fact, than the sweeping majority of ‘low void’ carbon fiber sheet I’ve purchased).
Looking forward to putting it through its paces.
